Its being a while I explored some new recipes so I was discusing with one of my staff from Kogi State and asked her what kind of meal they enjoyed back home. And she mentioned beans soup and because i am a pleaser..lol.. I decided to make her some beans soup, her village style. And I must say i enjoyed it as well.

Ingredients

  • 1 cup beans (blended to powder)
  • 3 tablespoons crayfish
  • 10 Seeds fresh scotch bonnet pepper (pounded roughly)
  • 1 handful locost beans/iru
  • 4 handfuls Ugu leaves (shredded)
  • 1/2 Kilo cowhead/beef
  • 1/4 Kilo sharki/pomo
  • 2 Cooking spoon full palm oil
  • seasoning
  • salt

Directions

Step 1
par-boil the cowhead, sharki, stockfish and pomo with onion, salt and seasoning until cooked and set aside
Step 2
sieve out the meat stock and pour in a pot then place on the fire
Step 3
add palm oil and allow to cook for 3-4 minutes so the palm oil boils in well
Step 4
then add the crayfish and pounded fresh pepper. cover to boil for 3 minutes
Step 5
using a wooden spatula or turning stick, slowly but consistently stir in the beans powder into the stock until it is slightly thickened. add more water is necessary. then reduce heat and cover to cook for 7-8 minutes but checking occasionally to prevent burning as the soup thickens as it boils.
Step 6
then add the parboiled meat, stockfish,shark and pomo
Step 7
pour in the shredded ugu leaves
Step 8
add the iru and stir to mix, then taste for seasoning and add more if that from the meat stock is not enough.
Step 9
leave to cook for 3-4 minutes
