Chin Chin (crunchy milky soft)

Ingredients

  • 1 Large egg
  • 1/4 teaspoon condensed milk flavor
  • 1/2 cup granulated sugar
  • 125g salted margarine
  • 1/2 teaspoon baking powder
  • 3 1/2 cups all purpose flour
  • vegetable oil for deep frying
  • 148ml evaporated milk (1tin)
  • 1/4 teaspoon nutmeg

Directions

Step 1
measure the sieved flour into a deep bowl
Step 2
add the sugar
Step 3
add grated nutmeg and baking powder
Step 4
mix and set aside
Step 5
whisk the egg in a bowl, and in a seperate bowl add the condensed milk flavor to the evaporated milk
Step 6
then add the butter to the flour mix
Step 7
mix well with your hand
Step 8
add the egg and milk
Step 9
then mould well until it all comes together.then leave to rest for 4 minutes

lightly flour a worktop and divide the dough into 2.

roll out the dough flat to about 1/4 inch thick

then slice through using a knife

lightly flour a tray and begin to dice the sliced dough. Then place on the floured tray. (avoid over crowding the tray)

heat up the groundnut oil in a pan until hot( do a drop test by dropping a piece of the diced dough in the oil. And if it begins to bubble immediately, then the oil is ready)

pour in the diced dough gently without stirring

do not over crowd the pan and do not stir for the first 1 minute after pouring in the dough or else you risk crumbling the dough

after 1 minute, gently stir until the color begins to change

at this stage, continue stirring and do not leave the chin chin unattended. take out the chin chin a step lighter than you want the color of the chin chin. This is because the color becomes darken after you take it out of the oil.

pour chin chin in a sieve and continue frying the next batch
Step 20
be sure to separate every batch from each other until totally cool before pouring them together. Do not pour a hot batch on a cooled batch of chin chin
