Coconut candy (grated crunchy)

This is the crunchy flaky and crunchy version of coconut candy. You can make use of a food processor to grate the coconut or use a slightly bigger hole grater to grate the coconut. To ensure crunchiness in this type of coconut candy as it contains less amount of sugar compared to the other types, the milk and oil has to be squeezed out. I bet you would love it!

Ingredients

  • 80g coconut (grated)
  • 1/3 cup sugar
  • 1 tablespoon extra sugar

Note

This is the crunchy flaky and crunchy version of coconut candy. You can make use of a food processor to grate the coconut or use a slightly bigger hole grater to grate the coconut. Directions

Step 1
grate the coconut
Step 2
place in a deep bowl and add hot water (to remove some of the coconut oil and milk). This process is what gives this type of coconut candy its crunchiness

properly squeeze out the water from the coconut milk and place the coconut in a bowl
Step 4
then add the 1/4 cup sugar
Step 5
rub in properly and spread on an oven tray lined with parchment paper
Step 6
then use another parchment paper to cover the top to prevent quick browning and burning before the coconut is completely dried
Step 7
then place in the pre-heated oven and check the texture after 15 minutes. Then remove from oven and add the extra 1 tablespoon of sugar and mix well
Step 8
then remove the top parchment paper and place back in the oven and let it brown up slightly while stirring occasionally (every 2 minutes) to ensure even browning.
Step 9
remove from oven and leave to cool then pour in an airtight container
