Crunchy Coconut yam fries

I happen to get lots of dried dessicated coconut after extracting coconut oil,coconut milk for various uses. But then after drying the dessicated i realized i only use it for baking but I wanted more from these guys.
So i decided to try out a thought that had being playing in my head. Which is to use coconut in place of breadcrumbs for coating. At first i was skeptical so i tried just 2 slices of the yam with a small quantity of oil and it was so delicious and crunchy I went all out with the remaining yam lol.
It din't only taste good but looked good too that at first sight, my son screamed cookies in excitement!!! hahahaha...
The coconut makes it so crispy and crunchy but be careful with the heat so the coconut does not burn faster before the yam is thoroughly cooked. So it's important to from on low heat and keep an eye on them as they fry really fast. But yeah!! i bet you would love it as much as I did.
Ingredients
- 2 Large eggs
- 1 cup all purpose flour
- seasoning
- salt
- desiccated coconut
- 1kg yam tuber
- vegetable oil (to deep fry)
