Crunchy Coconut yam fries

I happen to get lots of dried dessicated coconut after extracting coconut oil,coconut milk for various uses. But then after drying the dessicated i realized i only use it for baking but I wanted more from these guys. So i decided to try out a thought that had being playing in my head. Which is to use coconut in place of breadcrumbs for coating. At first i was skeptical so i tried just 2 slices of the yam with a small quantity of oil and it was so delicious and crunchy I went all out with the remaining yam lol. It din't only taste good but looked good too that at first sight, my son screamed cookies in excitement!!! hahahaha... The coconut makes it so crispy and crunchy but be careful with the heat so the coconut does not burn faster before the yam is thoroughly cooked. So it's important to from on low heat and keep an eye on them as they fry really fast. But yeah!! i bet you would love it as much as I did.

Ingredients

  • 2 Large eggs
  • 1 cup all purpose flour
  • seasoning
  • salt
  • desiccated coconut
  • 1kg yam tuber
  • vegetable oil (to deep fry)

Directions

Step 1
wash and slice the yam tubers to a size that would allow quick cooking then season with little salt
Step 2
set the whisked egg in a bowl, the flour in another and the desiccated coconut in the last bowl
Step 3
season the flour only with little seasoning and salt
Step 4
place the yam on the flour
Step 5
deep into the egg to coat
Step 6
then rub on the desiccated coconut
Step 7
line them on a board or tray
Step 8
then fry batch by batch on preheated vegetable oil on medium heat to allow the yam time to cook through as the desiccated coconut tends to brown really fast
Step 9
fry until golden brown
Step 10
remove from heat and place on a strainer to drain out excess oil
