
Crunchy Peppered Snail

I love snail with a passion and just can't get enough of them but I find it hard to eat snail out when its not prepared by me. And the reason is simple! I dislike any snail with the slightest slime and smell. So with my method of washing snail you can be rest assured of a slime and smell free snail so delicious and crunchy that it leaves you craving more.
Ingredients
- 6 Medium scotch bonnet pepper
- 4 Medium tomatoes
- 1 Medium onions
- 1 Slice green bell pepper
- 4 Extra large snails
- curry powder
- seasoning
- salt
- vegetable oil (for frying)
- Few slices ugu leaves

Step 1

 your snail should be squeaky clean like this without slime or smell when properly washed using this method |
Step 2

 After unshelling the snail, wash off the first slime off with alum twice and rinse then put the snail in a deep bowl and pour garri on it and use the garri to rub every corner of the snail properly. Then pour out the garri and rinse the snail with water.

 then put the snail in a pot and add water then place on the fire to boil |
Step 4

 after it has boiled for 5 minutes, pour out the water |
Step 5

 then remove the snail and rinse well. Then pour salt on it and scrub well with the salt (This is to get rid of the smell associated with snail). |

 then put the snail back in the clean pot with water and add half of the sliced onion,salt, seasoning and little curry powder then cover and allow to boil for 30-35minutes |
Step 7

 after 35minutes, remove the snail from the stock |

 then fry the snail |

 grind the peppers tomato and remaining onions then boil |
Step 10

 boil until the mix is dried up completely but not burnt |

 place a pan on the fire with vegetable oil and allow to heat up |

 then pour in the boiled tomato and fry for 2minutes then add salt,seasoning and little curry powder |
Step 13

 then sprinkle little sliced ugu leaves and stir fry for 6 seconds |
Step 14

 then pour in the hot fried snail and continue stir frying for 1 minute (note that the snail should go straight into the pepper sauce immediately as its taken off the hot oil. this will allow the pepper sauce penetrate the snail making it more tasty) |
Step 15
|
 leave in sauce and cover for 5minutes before serving |
