growing up, i enjoyed going to the market with my mum. One of the reasons is because you are sure of her taking you to the usually banga or owoh soup spot in Igbudu market Warri. So its a leap for joy when she picks you for the market ride, and being the last born i got most of these trips (lol). One of the thrilling factors of the banga soup prepared here is the apetizing manner in which they are displayed in earthenware. You can usually percieve the aroma from meters away. These earthenwares add a perculiar flavor and taste to the soup that leaves you longing for more. So you can imagine my joy when my mum visited and brought me my very own customized large earthenware. Mothers are wonderful and i love mine to pieces.

Ingredients

  • 1 Mudu palm fruit(banga)
  • 2 heaped tablespoons beletientien leave (dried)
  • 1kg fresh fish (cut,washed and presalted)
  • 1 Small onion (thinly diced)
  • 1 tablespoon dry red pepper (blended)
  • 1 heaped teaspoon irugege (blended)
  • 1 heaped teaspoon otiako (blended)
  • 5 leaves lime leaves (fresh)
  • 2 cups perewinkles (optional)
  • seasoning
  • salt

Directions

extracting the palm fruit juice
Step 1
pour the properly wash palm fruit in a pot and add water then place on the fire to boil for 50minutes
Step 2
sieve out the boiled palm fruit and add to a mortar and pound well
Step 3
add water to the pounded palm fruit and squeeze then sieve out the palm fruit juice.(make sure you do not add too much water,the juice should be thick)
soup preparation

pour the sieved palm fruit juice in a pot and place on the fire

add the thinly diced onions
Step 6
then the beletientien then leaves
Step 7
stir and cover to boil
Step 8
allow to boil for 10-15minutes or until you see little bits of oil forming ontop

then add season but do not add salt yet until you have added the presalted fish
Step 10
add the presented fish and cover to cook for 5 minutes

then add the periwinkles if you are using

pour in the pepper

add the irugege and otiako
Step 14
if you are using lime leaves add at this stage ( i could not lay my hands on any so i did not use in this case)

cover and leave to cook for 7-8minutes
