Facts about owho soup: You MUST use urhobo oil for it(only sold in delta State and not same as the popular palm oil) You MUST use native salt(not same as table table. please check my food condiment page to have a look) Dryfish is a MUST! You MUST prepare with starch. ( some others thicken with garri but the texture is different) You must not use salt! Tiko (bush meat) gives it a distinct taste.Note: if not properly made, it becomes watery as you eat. DO NOT COVER THE POT AFTER YOU GET TO THE STARCH STAGE UNTIL YOU ARE DONE COOKING

Ingredients

  • starch
  • native salt
  • native/urhobo oil
  • dry red pepper (grinded)
  • dried red prawns (grinded)
  • crayfsh (grinded)
  • pomo/beef/snail/dried meat
  • dry fish
  • seasoning

Directions

Step 1
Wash tiko,beef or snail and boil with just seasoning cube (enough cubes to cover for the soup quantity)until tender to taste.add pomo,Add washed dryfish .
if you are using periwinkles, add it at this stage.
Step 2
then add the blended pepper and crayfish + dried red prawn
Step 3
mix well and leave to boil for 1 minute
Step 4
then add the native palm oil
Step 5
and mix well
Step 6
then taste for seasoning and cover to boil for 3minutes
Step 7
mix little starch in water until completely mixed (to thicken)
Step 8
then gradually but continuously pour in the starch mix while stirring in a clockwise motion (watch the thickness as you pour in and mix the starch then stop when its very thick)
Step 9
it should be thick at this stage with the oil well incorporated with no floating oil. floating oil is actually a sign of adultrated native oil.
Step 10
scrape a bit of the native salt or hit in a mortar(you don't need too much of it)
Step 11
then add to the soup and stir, then allow to cook for 2 minutes.(when you add the native salt, the soup should foam up and slightly change color and texture.(Thats a test for original native salt)
