Fried Rice (bell pepper coloring method)

in preparing fried rice, i discovered lots of people make use of too much turmeric and curry powder to color the fried rice. But this only adds a strong taste to the rice as a result of the excess turmeric and curry powder used and also the rice turns yellowish and not that light yellowish green vibrant color fried rice is known for. So recently i have being researching on natural means of food color and started making use of natural vegetables for my food coloring. in order to achieve this yellowish green for my fried rice, i make use of green bell pepper liquid. Try this out and thank me later.

Ingredients

  • 2 Large green bell pepper (dice 1 and blend the other)
  • 1 leaf cabbage (the green part)
  • 1kg rice
  • 3 Medium carrot (diced)
  • 1 Medium onions (dices)
  • green peas
  • liver (boiled,diced and partially fried)
  • spring onions (sliced)
  • unripe green scotch bonnet pepper (sliced)
  • groundnut oil
  • meat stock
  • curry powder
  • tumeric
  • white pepper powder
  • seasoning
  • salt

Directions

Step 1
par boil the rice and rinse out the white starchy water completely. Make sure the the rice rinse until the rice is completely cold. Then set aside in a sieve to drain
Step 2
put 1 of the bell peppers in a blender with the cabbage then add little water and blend smooth
Step 3
sieve out the liquid from the blended bell pepper using a tiny sieve mesh. and set the liquid aside
Step 4
put the vegetables (except the sliced spring onion) in a small pot with little water and allow to boil for 1minute. Then sieve the liquid and set aside
Step 5
place a pot on the fire and add your meat stock
Step 6
then add the sieved bell pepper liquid and the boiled vegetables liquid
Step 7
add little curry powder
Step 8
add little tumeric powder
Step 9
add white pepper and little seasoning if that from the meat stock would not be sufficient
Step 10
then add the par-boiled rice and quickly stir and cover to boil until the rice is soft to taste and completely dried.
Step 11
do not stir the rice in the process of boiling to avoid a soggy rice. it should dry well like this
Step 12
when completely dried, stir the rice to mix well and set down from fire
Step 13
place a clean pan on the fire and add little groundnut oil or butter
Step 14
then add part of the diced par-boiled vegetables and part of the sliced spring onions
Step 15
add part of the fried liver
Step 16
add little seasoning depended on the taste of the boiled rice and stir fry for 6 seconds
Step 17
then add part of the boiled rice
Step 18
and stir fry for 1-2minutes
Step 19
then pour into a dish and repeat frying steps for remaining rice and vegetables

  1. Hello Seki, just to clarify,would that be boiling the rice in 3 different juices?, green cabbage and green pepper juice, stock juice and the juice from the boiled veggies?.thanks a lot
