This is the kiddies version of agidi jollof. These gidi cubes are so delicious and inviting that capture the attention of any child. In terms of nutrients, they are also fairly balanced. Have fun making gidi cubes.

Ingredients

  • 1/2 Small green bell pepper (thinly diced)
  • 1/2 Small red bell pepper (thinly diced)
  • 1/2 Small yellow bell pepper (thinly diced)
  • 1 piece fresh scotch bonnet pepper (thinly diced)
  • 1 cup pap (corn meal)
  • 1/8kg beef
  • 2 tablespoons tomato puree
  • kosher salt
  • soy sauce
  • 1/4 Small onions

Directions

Step 1
par boil the beef with little kosher salt,onion and soy sauce
Step 2
then pick out the beef from the meat stock and blend (i used a blender to blend)
Step 3
mix the pap with cold water to a runny constituency and set aside
Step 4
diced all peppers very thinly
Step 5
add the tomato puree to the little meat stock on the fire and stir to mix (the tomato puree should slight thicken the stock)
taste for seasoning(but her in mind that it does not require heavy seasoning)
Step 6
then add the diced peppers and blended meat
Step 7
stir to mix
Step 8
gradually pour in the mixed pap while stirring continuously with a wooden spatula
Step 9
stirring for 3-4minutes until the color and texture changes (you can add little water if its too thick as it does not need to be too thick so it can easily take the form of any mold)
Step 10
use a table spoon to scoop into ice cube trays and leave to cool a bit and take shape.
