This is not your average pepper soup being that there is the addition of fresh tomatoes and sizable amount of fresh ginger. The yam gets enough time to boil and soak up the deliciousness of the sauce making you long for more. The use of goat leg also makes this dish peculiar and delicious.

Ingredients

  • 1 Medium fresh ginger root
  • 1 Large fresh tomatoes
  • 4 pieces fresh scotch bonnet pepper
  • yam (diced)
  • goat leg
  • seasoning
  • salt
  • 3 Seeds Ehuru spice (bended)
  • 1 teaspoon onion powder/sliced onions

Directions

Step 1
par boil the goat leg with salt, seasoning until almost soft and with some stock left.
Step 2
blend the ginger pepper and tomato
Step 3
sieve the blended tomato mix
Step 4
add the sieved tomato to the parboiled goat leg in the pot
Step 5
add seasoning, salt and blended ehuru spice
Step 6
add the washed and cubed yam
Step 7
add the onion powder or sliced onions
Step 8
taste for seasoning and cover to boil until yam is tender (only swirl pot around and avoid stirring the pot in order not to break the yam and make the sauce over thick.
