groundnut cake is basically made from caramelized sugar and peanut. I took this a lot as a kid and also made it and sold to other kids in my primary school days...lol. It is highly crunchy and taste really nice too.

Ingredients

  • 1 cup groundnut (peanut) (pounded roughly)
  • 1 cup sugar

Directions

Step 1
pour the groundnut in a mortar and pound or use any substitute to crush the groundnut coarsely
Step 2
then place a pot on the fire and pour in the sugar
Step 3
allow the sugar to melt and caramelize
Step 4
then pour in the pounded groundnut
Step 5
stir to mix in the caramelized sugar
Step 6
then pour on a parchment paper placed on a flat surface
Step 7
cover with the other end of the parchment paper and use a rolling pin to roll our to 1/4 inches thickness
Step 8
then uncover and cut to shape and allow to cool

    • Oh! Please reduce the sugar quantity to your taste. But not over reduced to the extent that there is not enough caramelized sugar to make the pounded nuts stick together.
