Lite Spring Stew

Ingredients

  • 800g fresh tomato (roughly grinded)
  • 100g fresh pepper (roughly grinded)
  • 50g onion (roughly grinded)
  • 80ml groundnut oil
  • 2kg fresh fish (washed and salted)
  • 1 Large spring onion (sliced)
  • salt
  • seasoning

Note

try not to roughly blend the vegetables with too much water

wash and present the fish 10minutes before adding to the soup to allow the salt penetrate the fish

Directions

Step 1
pour the tomato,pepper and onion in a pot and set on the stove
Step 2
add the groundnut oil
Step 3
add the seasoning
Step 4
add the washed and pre-salted fish
Step 5
allow to boil for 3 minutes and taste for salt,if okay,then cover to boil until fish is cooked
Step 6
when the fish is cooked,pour in the sliced spring onion stem,swirl pot to mix and turn off heat.
As the heat from the soup continues to cook the added spring onions
