Obe ata stew feels and tastes like fried stew but it is not fried at all. And a little secret for your stew if you need that special 7 star hotel aroma and unique taste (add little green bell pepper to your blended tomatoes,onions and pepper).

Ingredients

  • 10 Large fresh tomatoes (blended)
  • 20 Large fresh scotch bonnet pepper (blended)
  • 1 Small green bell pepper (blended)
  • 1 Medium onion (blended)
  • 1 Sachet tomato puree
  • 1 Large fresh chicken
  • 1 Small cut ginger (blended or crushed)
  • 3 cloves garlic (blended or crushed)
  • 1/2 teaspoon nutmeg (grated)
  • 1 teaspoon curry powder
  • seasoning
  • salt
  • 200ml vegetable oil

Directions

Step 1
place chicken in a pot and add the ginger,garlic,nutmeg,curry powder, salt and seasoning.then massage well and place on the fire to boil for 3-4 minutes and add water to continue cooking until almost done.
Step 2
pour the blended tomato,pepper and onions in a pot and add the sachet tomato puree then mix well before placing on the fire to boil.
Step 3
when it has boiled down and very thick, add the vegetable oil and let it continue boiling for 9-10 minutes
Step 4
then sieve some of the chicken stock and add to the tomato
Step 5
allow to keep boiling until the tomato is very thick and the vegetable oil begins settles on-top.
Step 6
meanwhile, pick out the chicken from the meat stock (you do not need the debris from the unsieved meat stock to cloud your stew and change its vibrant red color)
Step 7
add the chicken to the pot and stir. Then allow to boil for 5-7 minutes
