in my opinion, the color of your tomato and peppers determines the color of your stew. so if you love red tasty stew, go for the very red tomatoes and peppers. unlike fried stew, were you have to fry the tomatoes, for obe ata you do not fry but add the groundnut oil or vegetable oil to the boiled tomato. This method gives you the delicious fresh taste of the tomatoes.

Ingredients

  • 1kg tomatoes (blended)
  • 3 Medium tatashe (blended)
  • 200g scotch bonnet pepper (blended)
  • 2 Medium onions (blended)
  • 2 tablespoons tomato puree
  • 1kg cow beef/intestines
  • 5 Cooking spoons groundnut oil
  • seasoning
  • salt

Note

do not blend the tomatoes and peppers with much water in other to reduce the boiling down time.

Directions

Par-boiling the meat
Step 1
par boil the meat and intestines using:-
garlic
ginger
onions
curry powder
nutmeg
seasoning
salt
par-boil until almost dried
Step 2
Add the blended vegetables to a pot (but do not put on the fire yet)
Step 3
add tomato puree and stir
Step 4
then put on the fire and cover to boil
Step 5
boil until thick but not dried
Step 6
then add 5 cooking spoons of vegetable oil
Step 7
stir and add the par-boiled meat ( you do not need the meat stock to be added because the taste and smell of the intestines would over power the stew).stir and taste for seasoning
Step 8
add seasoning and salt if needed
Step 9
and cover to cook for 2-3minutes or until you see oil floating on top
