Ofe akwu is the igbo version of banga soup and also super delicious! some natives add ogiri  to their ofe akwu but i prefer mine without. You can use any meat of choice and still arrive at a fantastic end result. But just be sure not to make your palm fruit juice too watery to avoid long cook time (to thicken) thereby over darkening the soup.

Ingredients

  • 1 Mudu palm fruit(banga)
  • 3 handfuls ugu leaves (sliced)
  • 1 handful scent leaves (sliced)
  • 1 Kilo sharki/roundabout/beef
  • 15 Pieces fresh scotch bonnet pepper (pounded roughly)
  • seasoning
  • salt
  • 1 Small onions (diced thinly)

Directions

Step 1
boil, pound and sieve out the palm fruit juice and pour in a pot (try not to make it too watery)
Step 2
add the pounded pepper
Step 3
add the sliced onions (so it melts in the soup as the palm fruit juice boils down)
Step 4
allow to boil with lid open until the palm fruit juice is very thick and the oil from the juice starts floating on top (very important step)
Step 5
meanwhile, parboil your meat with onions,seasoning and salt and halfway done, add your pre-soaked stock fish
Step 6
continue boiling until meat is tender and meat stock is well reduced
Step 7
then pour in the par-boiled meat and stock into the boiled palm fruit juice on the fire
Step 8
stir to mix and taste for seasoning, usually the seasoning from the meat stock should be enough but if not add little and allow to boil for 3 minutes
Step 9
then add the sliced vegetables (ugu and scent leaves)
Step 10
cover with lid and let the soup simmer for 3 minutes
