If you are an okra soup lover i promise you won't get enough of this! I made use of gino magic paste as its a mixture of onion,tomato and pepper which gives this soup its rich red color. It is also a child friendly meal that kids won't say no to after having the first taste..lol. The ogbono also makes this soup really strechy so don't be afraid of cutting the okra slim by adding the tomato paste.

Ingredients

  • 300g Okra (chopped)
  • 2 heaped tablespoons ogbono (grinded)
  • 8 Large ugu leaves (shredded)
  • 300ml meat stock (well seasoned)
  • 1 Sachet gino magic tomato paste
  • 1kg fresh titus fish (washed cut and deboned and lightly salted)
  • 5 Large fresh shrimps

Directions

Step 1
put your meat stock on the fire
Step 2
add the titus fish and shrimp and cover to cook for 4 minutes
Step 3
add the magic tomato paste to a bowl with little water and mix well
Step 4
add the chopped okra
Step 5
whisked properly for 3-4minutes using a spatula or metal cooking spoon
Step 6
after 4 minutes, gently remove the fish and prawns into a flat plate
Step 7
then reduce the gas heat and add the ogbono powder
Step 8
whisk well and leave open to cook for 3-4minutes without burning and stir occasionally
Step 9
then add the whisked okra mix
Step 10
stir well and leave to boil for 2 minutes then taste for seasoning. But usually you don't need additional salt or seasoning as that from the meat stock should be sufficient.

then add the ugu leaves and stir

and then gently put back the fish and shrimp and leave to boil without the lid for 4 minutes

do not stir after the above step but gently swirl pot around to mix and avoid burning under
