Peppered Pomo

Peppered pomo is a pleaser any day!!! can be served as a side dish or alone with any drink of choice. Just be sure the pomo is very tender and with it's almost dried thick stock before adding to the sauce.

Ingredients

  • 1kg cow skin (cleaned and diced)
  • 1 Large red onions (sliced thinly)
  • 2 Medium tomatoes (sliced thinly)
  • 5 red scotch bonnet pepper (sliced thinly)
  • 1/4 cup tomato puree
  • 3 tablespoons vegetable oil
  • seasoning
  • salt
  • 1 teaspoon curry powder

Note

Directions

Step 1
par-boil the cow skin with little salt and seasoning until tender
Step 2
place a pan on the fire and add the vegetable oil and allow to heat up, then pour in the sliced tomatoes, pepper and onions and stir
Step 3
add the tomato puree and stir
Step 4
pour in the par-boiled pomo with the little thick stock from it into the pan and stir
Step 5
taste for seasoning and adjust appropriately to taste
Step 6
stir fry for 2-3 minutes and set down.
