Puff Puff (with bread flour)

I was discussing with a friend and randomly she mentioned a popular A list restaurant in Abuja that sells very big and stretchy puff puff. And she said only a piece fills you up and a piece is sold for more than 80 naira! immediately i was not with her in spirit anymore lol, as i began to think hum! nice one, how can i take my puff puff to another level and make it stretchy and bigger too. Then a thought came to me ( why not use bread flour that has more gluten than all purpose flour). But because i bought my bread flour pretty expensive and it seems scarce, i told myself i was not going to use all bread flour for trial and error lol. So i used equal part of all purpose flour and bread flour. But then i made the mixture slightly thicker than the normal puff puff mix. And i came up with something spectacular (very soft,stretchy,light weight,fluffy and yet more filling than the normal puff).And hence forth, no more puff puff without mixing with bread flour. You just have to try it out to understand. LOL

Ingredients

  • 1/2 cup all purpose flour
  • 1/2 cup bread flour
  • 2 tablespoons sugar
  • 2 pinches salt
  • 2 pinches nutmeg
  • 110-130ml lukewarm water
  • 1 1/4 teaspoon yeast

Directions

Step 1
mix the dry ingredients in a bowl and add the lukewarm water to form a thick paste and cover in a warm place for 1hr 30minutes to ferment
Step 2
after 1hr 30minutes, use hands to mix down
Step 3
place a deep pan or pot on the fire and allow to heat up ( i did not want to use much oil, still i had to deep fry so i used a small deep pot and fried 1 ball at a time).
Step 4
scoop in a sizable ball, and reduce heat to medium to allow the insides time to be ready.
Fry until golden brown

    • Hello Eunice, it would be written boldly on the pack if its bread flour just like any other type of flour. But if its the usually flour measured and sold in the market, then its all purpose flour

  4. I was just thinking same to myself that’s what brought me to this article . That bread flour is stretchy and that stretchiness for me is what is most desirable about puff puff. I will try this today
