Ingredients

  • 128g self rising flour/All purpose flour (sieved)
  • 1/2 heaped tablespoon dry instant yeast
  • 50g sugar
  • 1/8 tablespoon salt
  • 2 pinches nutmeg (grated)
  • vegetable oil
  • 150ml water (lukewarm (43 degree C))

Note

puff puff fries really fast, so pay attention and never leave it unattended.

when frying the next batch reduce the gas heat before dropping in the mix and then increase back.This will stop the second batch from frying faster as the temperature of the oil must have increased more.

Directions

Step 1
measure and sieve the flour into a deep bowl

add yeast
Step 3
add sugar

add nutmeg

mix properly
Step 6
add salt and mix well

use a kitchen thermometer if possible to be sure the water is not too hot but between 43 to 43.5 degree celsius to avoid killing the yeast before it begins its work

add the lukewarm water bit by bit while mixing with your hand.

mix to a smooth consistency

the mixture should look like this. Not too thick and not too runny. just in-between.

Cover the bowl and keep in a warm place (not hot). for exactly 2hrs.

After 2 hours, the mixture should have tripled in size with air bubbles showing on-top

see how the inner mixture looks,when you run your hands through.

mix with your hand to reduce the mixture

line a sieve with kitchen roll to soak up any excess oil

heat up the vegetable oil in a deep pan.The oil should be enough to deep fry.

start scooping the mixture with your hands.it should look like this

wait for the oil to heat up and drop in the scooped mixture

if the oil is hot enough, the puff puff should pop up immediately you drop it in. if this does not happen, it means the oil is not hot enough.

fry until golden brown and put in the kitchen roll lined sieve
