These vegetable omelette are to die for and also excellent for both kids and adults as break fast or dinner with egg, boil/fried yam, boiled/fried plantain or bread.

- 3 Medium tomatoes (sliced)
- 5 pieces scotch bonnet pepper (sliced)
- 1 Small onions (sliced)
