These vegetable omelette are to die for and also excellent for both kids and adults as break fast or dinner with egg, boil/fried yam, boiled/fried plantain or bread. 

Ingredients

  • 3 Large eggs
  • 8 leaves ugu (shredded)
  • 3 Medium tomatoes (sliced)
  • 5 pieces scotch bonnet pepper (sliced)
  • 1 Small onions (sliced)
  • curry powder
  • seasoning
  • salt

Note

These vegetable omelette are to die for and also excellent for both kids and adults as break fast or dinner with egg, boil/fried yam, boiled/fried plantain or bread.

Be sure to use low to medium heat to avoid burning the eggs

Directions

Step 1
prepare you ingredients and set aside
Step 2
add 2 tablespoon water to the beaten egg and whisk with a fork (to get it fluffy and less dense)
Step 3
put a medium sized pan on the fire and add little vegetable oil
Step 4
add the sliced vegetables and stir fry for 10 seconds
Step 5
then add seasoning and salt to cover for the egg mix
Step 6
add curry powder
Step 7
stir fry more for 30 seconds
Step 8
then add the sliced ugu leaves
Step 9
stir fry for 30 seconds
Step 10
then pour in the whisked egg
Step 11
quickly mix to incorporate the vegetables before it begins to set
Step 12
then reduce the heat and leave until you see some parts setting
Step 13
then use your spatula to gently drag the set part to the middle
Step 14
gently do the dragging for other set parts
Step 15
until the egg is completely set
